While perusing the world of You Tube I happened to come across a video post with low card recipes. One of which included different ways to make french fries with different vegetables. I’m not a fan of asparagus or eggplant however I do like carrots. Yes you read that right!

How do you make tasty low carb french fries? You do it with carrots! No kidding. I tried this recipe on a whim with a bag or organic carrots I had forgotten about in the refrigerator and gave it a try.

Here is everything you will need to make these flavorful tasty low carb french fries.

    Instructions:

    1. Open your bag of carrots and wash/rinse thoroughly.
    2. Using your cutting board and cutting knife, cut the ends off the carrots.
    3. (Optional) You can use a peeler to remove some of the outside skin of the carrot you don’t care to eat.
    4. Then proceed to cut the carrots length wise in half. Then cut those halves again length wise into french fry length strips. (Approximately 3-4 inches in length. Ideally the size thickness would be slightly less than your pinky finger.)
    5. Place all your freshly cut carrots into a large bowl. Add the olive oil and seasonings to taste.
    6. Using a spoon (or your freshly washed hands) toss and mix the carrots and seasonings together in the bowl.
    7. Next, get your baking sheet and place foil at the bottom. Spray non stick spray on the foil.
    8. Transfer your carrots to the baking sheet, lining the carrots up neatly side by side so none are on top of each other.
    9. Turn on your oven. Heat at 425 degrees for 25 minutes.
    10. Take the carrot fries out and they are ready to serve. Be careful they are hot but oh so tasty!

    Conclusion:

I loved this recipe. Why? Not only was this easy to make but the tasty low carb fries with seasoning reminded me of sweet potato fries with less carbs. I love sweet potatoes! Using this recipe is a great alternative to traditional french fries for those who are diabetic, watching their diet or looking for a healthier alternative. Knowing that this recipe turned out so great, I had to share.
