If you are looking to find a low carb breakfast recipe then this post is for you. Have you found that you have fallen out of your healthy routine after experiencing stress or a life changing event? Has your diet suffered as a result? Are you looking to turn things around? Are you trying to reduce sugar in your diet? Do you need to reduce carbs? Are you looking for a little variety in your routine? Are you searching for a healthy breakfast alternative? This recipe is for you.
As a person who is continuously trying to improve my eating habits, this is one recipe I have grown to love. I admit I am a chocolate and carb person by nature so eating higher protein and vegetables at breakfast time instead of a muffin or bagel is an improvement. Small collective changes over time do make a difference. Consistency is key. With that said, here is one recipe you may want to give a try at breakfast.

Low Carb Breakfast -Veggie & Cheese Egg Bake Recipe
Supplies
- 13 x 9 inch glass oven pan
- 1 fork
- 1 small bowl
- Non-stick spray
- 1 frying pan
- 1 spatula
- Cutting board
Ingredients
- 4 whole eggs
- 2 handfuls of baby spinach
- 1 tomato chopped
- ½ cup sharp cheddar cheese
- ½ cup mozzarella cheese
- 1/5 Green bell pepper (chopped)
- Pinch of Salt (optional)
- Pinch of Onion Powder (optional)
- Pinch of Black Pepper (optional)
- Pinch of Paprika (optional)
Serves 2-3 people
Directions:
- Prepare by spraying your 13 x 9 inch pan with non-stick spray. Pre heat oven to 375 degrees. Set pan to the side.
- Take 2 large handfuls of baby spinach (rinsed) and put into non-stick frying pan. Turn on heat to medium high and cook spinach until it starts to wilt. Remove from heat.
- Using a spatula remove the spinach from pan and spread evenly in glass 13 x 9 inch pan
- Next, chop tomato and green pepper and spread evenly in pan on top of spinach.
- Crack eggs and put into a small bowl and add any salt, pepper, paprika and onion powder as desired. Using a fork, mix well in bowl, and then pour contents evenly over ingredients in 13 x 9 pan.
- Lastly, spread the mozzarella cheese and sharp cheddar cheese evenly over ingredients in the 13 x 9 inch pan.
- Place 13 x 9 pan (uncovered) onto the center rack in the oven for 15-20 minutes.
- The egg bake is finished when the egg is completely cooked through and not liquid. The edges of the egg bake will start to turn golden.
- Remove from the oven (while using your oven mitts) when done and allow to cool for a minute or so. You can now cut the egg bake into six squares. This recipe makes 6 squares 4 x 3 inches each. Serving size is good for 2-3 people.
- Serve and enjoy.

You can serve this with a side of fruit with tea for a great breakfast, low in carbs and high in protein and veggies. You can alter or make this recipe with your own fine touches by adding or deleting ingredients you love. Cheers to good health!

I haven’t cooked for myself in so long, but this looks like a recipe I could try. I’m supposed to eat gluten-free, but I haven’t done it lately and my health is suffering because of it.
Hmm. If you have to have gluten free, you may want to substitute the cheese for a vegan option that’s similar or an egg substitute. Hope you can try it. It’s yummy.
This is such a great family meal! There is so much goodness in here too. This DOES look tempting!
I might add some finely copped onion and a little creme fraiche for a second go at the meal too.
Oh I like that idea!
While I don’t cook much for breakfast (a fried egg is all I can manage in the morning), we love to have breakfast for dinner! This looks like a great recipe that our whole family will like.
Beth,
Give it a try. I bet you’ll like it. I’m a fan of breakfast for dinner all day!
Oh, yummmm-y! I am sitting here with my coffee and drooling! I will have to definitely try that recipe. Thanks for sharing (and making me hungry! LOL!)
Dorothy,
You’re welcome. I am to please! LOL
This dish looks delicious! I always like finding new breakfast options that are healthy. The amount of veggies make me feel like I could eat some toast with this low-carb option! I love toast and I’ll skip it often because so many of our breakfast choices are carb-heavy. Whee!
Irene,
Hmmm…I’m trying to think of the last time I had toast….yummm
DANG!! This is making me SO hungry! I love egg bake recipes. I’ll try this one, but I’m not a fan of spinach so I’ll substitute the spinach with broccoli. Thanks for sharing!

Cathy,
Yes. That’s the beauty of the recipe. You can mix and match the ingredients you like! Enjoy.
That looks delicious, I may well give it a try for a lunch meal. I’m on a no starchy carbs thing at the moment (not through choice) so having some delicious alternatives is great (although I might have to change the cheese you used… hahaha
Michelle,
LOL I understand. Glad to help give you different alternatives to try. Enjoy!
I’d eat that. Great for meal prepping for the week!
Joelle,
Yes great idea for meal prepping!
Oh, is that for humins only? Boo. Cookie says she’d have some of that.
Yes, Sorry Cookie this time it’s for humans. 😉
I’m a chocolate/carb person too but this looks good! I’ll have to make it sometime for a weekend breakfast. I’m terrible about eating breakfast. Usually it’s yogurt or some fruit.
I know what you mean. During the week I like to get something quick and easy so weekends are perfect for trying a recipe like this.
Low carb is important for myself and my daughter and I love how easy this is! It looks so good too I may go make it now!! I love breakfast anytime!
Joely,
Hope you like it! Low carb recipes are definitely in demand. So many of us have to keep our carbs in check for good health.
Looks very delicious. I’ll have to try it!
JoeHx,
Hope you do. It’s easy and yummy.
i have been thinking of a frittata for a while now and your post here inspired me – so tomorrow’s breakfast is decided 🙂
Vidya,
Sweet! Enjoy, Let me know how you like it! 🙂
Yummmm this looks so good, can I prepare it the night before and just bake it in the morning ? I eat oatmeal for breakfast each morning and this would be such a great change
Ruth,I think that would work just fine since it would stay fresh in the refrigerator.
That would be a big recipe, great for a potluck.
Gail,
Good idea!
